aioli
1 t crushed garlic
1 large egg yolk
1 t dijon mustard
salt, pepper and lemon juice to taste
1 cup extra-virgin olive oil
crush garlic and combine in a large bowl with egg yolk, mustard and seasonings. beat with wire whisk* while gradually adding oil. continue until smooth and thick.
* this can also be done in a food processor.
