was one of my favorite fish to prepare. being a grilling
enthusiast i overlooked the very common local
method of fast deep fried yellowtail . many cuban
restaurants prepared the fish in this manner and
served with white rice and lime. the heat of the oil
sealed the moisture of the meat while making a
delicious crispy skin to die for. something a bbq
can not produce. ah miami. this weekend i’ll grill
my yellowtail snapper and serve it with a mango based
salsa with sweet white onion, tomato, jalapeño
kiwi, cilantro and lime juice. thanks to monohans seafood i know i’ll be enjoying the freshest snapper
outside miam i!!!
