it’s a wrap- the healthful big bite! thai mahi mahi lettuce wraps
for years whenever our friend, jody parr, brought her famous thai chicken wraps to a party, we knew that we were in for a treat. tangy, limey, with ginger, cilantro and nice stinky fish sauce, it’s fun hands on food that you can’t get enough of!
lisa made up a batch last week and the first thing our daughter, sarah, said was, “this would be good with fish, dad”. i thought, why not? lots of fish and shellfish came to mind. bluefish or mackerel have plenty of flavor to hold up to the bold marinade. shrimp or scallops would work too.
since mahi mahi has a similar texture and color and takes on flavors like chicken does, the other night we gave it a try. the results were sensational! sarah liked it more than the original (we still love yours jody). today we received some beautiful mahi mahi! although not listed in the recipe, a little fresh mint and basil garnish would be a nice touch and if you like spicy you could use fresh thai chili instead of chili flakes.
