- 3 tomatoes, cored and cut into 1/4 inch dice
- 1/4 c finely chopped white onion
- 2 t fresh cilantro leaves
- 2 t fresh lime juice
- 1 t rice wine vinegar
- salt and freshly ground black pepper to taste
- 1 t finely chopped jalapeño pepper
toss all ingredients into a bowl and mix together.
