fresh, local tomatoes and bluefish are at their peak this time of year…it’s a flavor explosion!<\/em><\/p>\n serves 4<\/em><\/p>\n pre – heat oven to 500\u00ba.\u00a0toss tomato halves and garlic in olive oil and arrange on a sheet tray or cookie sheet with sides, sliced side up.\u00a0sprinkle with kosher salt and pepper.\u00a0roast for 15-20 min. or until tomatoes are browning around the edges.<\/p>\n chop the garlic and cut the tomatoes in large chunks.<\/p>\n heat pan over med- high heat.\u00a0add about a tablespoon of olive oil and add anchovies and garlic.\u00a0when anchovies start to break up, add tomatoes, olives, capers and vinegar.\u00a0stir then take off heat until bluefish is ready.<\/p>\n fire up the grill and with these large thick fillets, use indirect heat method (do this by separating the coals and piling them up on opposite sides).\u00a0make sure grill is clean and oiled.<\/p>\n cut fillet in half or if you want to present a whole fillet, flip carefully with 2 spatulas.\u00a0lightly baste fish with olive oil on both sides and season with salt and pepper.\u00a0make sure grid on grill will be diagonal to fish, so you’ll get those nice grill marks.<\/p>\n place fillet meat side down in center of grill (so that it’s not over coals).\u00a0cover with vents open and grill lid slightly ajar (to give it a little more air and heat).\u00a0don’t move the fillet, let it set.<\/p>\n grill for 4 min. a side or until fillet is opaque in center (gently cut into center to check).\u00a0carefully transfer to platter and spoon heated tomato mix over center of fillet.<\/p>\n","protected":false},"excerpt":{"rendered":" fresh, local tomatoes and bluefish are at their peak this time of year!<\/p>\n","protected":false},"author":4,"featured_media":5994,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[14],"tags":[87,111,58],"aioseo_notices":[],"_links":{"self":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts\/2011"}],"collection":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/users\/4"}],"replies":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/comments?post=2011"}],"version-history":[{"count":0,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts\/2011\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/media\/5994"}],"wp:attachment":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/media?parent=2011"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/categories?post=2011"},{"taxonomy":"post_tag","embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/tags?post=2011"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}\n
