{"id":2728,"date":"2020-08-21t08:08:12","date_gmt":"2020-08-21t08:08:12","guid":{"rendered":"\/\/www.bulkreeftv.com\/?p=2728"},"modified":"2020-08-21t17:44:40","modified_gmt":"2020-08-21t17:44:40","slug":"spicy-curry-cumin-seared-cobia-with-thai-roasted-chili-glaze-over-mango-salsa","status":"publish","type":"post","link":"\/\/www.bulkreeftv.com\/spicy-curry-cumin-seared-cobia-with-thai-roasted-chili-glaze-over-mango-salsa\/","title":{"rendered":"spicy seared cobia with thai roasted chili glaze over mango salsa"},"content":{"rendered":"<ul>\n<li><em>serves 2<\/em><\/li>\n<li>3\/4 &#8211; 1 lb. cobia fillet, center cut, pin bones removed, skin off<\/li>\n<li>1 cup <a href=\"\/\/www.bulkreeftv.com\/monahans-mango-salsa\/\" target=\"_blank\" rel=\"noopener noreferrer\">mango salsa<\/a><\/li>\n<li>1 t monahan&#8217;s cajun seasoning, or paul prudhomme\u2019s cajun magic<\/li>\n<li>1 t cumin powder<\/li>\n<li>1 t curry powder<\/li>\n<li>1 t roasted red chili paste, we use thai kitchen brand (available in most grocery stores)<\/li>\n<li>juice from 1 lime<\/li>\n<li>olive oil<\/li>\n<\/ul>\n<p>pre heat oven to 350\u00ba.\u00a0prepare mango salsa.\u00a0mix cajun seasoning with curry and cumin.\u00a0coat top and bottom of fillet with seasoning mix.<\/p>\n<p>heat iron skillet or heavy-duty ovenproof pan over high heat.\u00a0add 2 t olive oil to pan and when sizzling hot add fillet and sear for 2 minutes per side.\u00a0remove pan from heat for a moment then remove fillet from pan, slice diagonally into 1 1\/4 inch pieces, return pan to heat and add cobia slices (on their sides) to pan.\u00a0sear for 2 minutes then flip and place pan in the oven for another 2-4 min. or until cobia is barely opaque in the center (gently check with sharp knife so you won&#8217;t mar the appearance).<\/p>\n<p>fan the fillets over the mango salsa on the plates.\u00a0pour off any excess oil from pan and add roasted chili paste, olive oil and lime juice and stir until boiling and well mixed.\u00a0glaze over tops of each piece of fish and attack!<\/p>\n","protected":false},"excerpt":{"rendered":"<p> a few weeks ago we were offered some farmed raised cobia and since it&#8217;s such a great fish in the wild i thought we\u2019d give it a taste. i was pleasantly surprised by the texture, flavor and versatility of this fish!<\/p>\n","protected":false},"author":4,"featured_media":6136,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[14],"tags":[190,191],"aioseo_notices":[],"_links":{"self":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts\/2728"}],"collection":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/users\/4"}],"replies":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/comments?post=2728"}],"version-history":[{"count":0,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts\/2728\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/media\/6136"}],"wp:attachment":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/media?parent=2728"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/categories?post=2728"},{"taxonomy":"post_tag","embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/tags?post=2728"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
