serves 4-6 as an appetizer (or 2-3 for dinner)<\/em><\/p>\n dip smelt in milk, then dredge in drake’s batter mix or seasoned flour.<\/p>\n when oil is sizzling hot add smelt to pan (do not over crowd pan, it\u2019s better to do a few batches if you need to).\u00a0when smelt is crisp, golden and opaque to the bone, drain on paper towel and set aside.\u00a0pour off most of the olive oil then add 1\/2 cup olive oil.\u00a0when oil is hot, add peppers, scallions, carrots and garlic.\u00a0saut\u00e9 until vegetables soften.\u00a0stir in thyme, bay leaves, and cumin.\u00a0keep stirring until flavors blend then add the vinegar, sweet chili sauce, sriracha sauce and water. reduce, stirring occasionally, until marinade thickens and becomes more sauce like.\u00a0remove from heat and let cool at room temp.<\/p>\n pour half of the marinade in a baking dish or cazuela, then place smelt on top.\u00a0completely cover the smelt with the rest of the marinade.\u00a0cover with food wrap and refrigerate for 4 hours to overnight.\u00a0rearrange on a nice looking platter and serve.<\/p>\n we sometimes attack a batch before they hit the fridge; not quite marinated but so good!<\/em><\/p>\n <\/p>\n","protected":false},"excerpt":{"rendered":" smelt works great for this recipe but rich whole fish like sardines or fillets of spanish or king mackerel or salmon also work very well.<\/p>\n","protected":false},"author":4,"featured_media":6071,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[14],"tags":[187,319,189],"aioseo_notices":[],"_links":{"self":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts\/4745"}],"collection":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/users\/4"}],"replies":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/comments?post=4745"}],"version-history":[{"count":0,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts\/4745\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/media\/6071"}],"wp:attachment":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/media?parent=4745"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/categories?post=4745"},{"taxonomy":"post_tag","embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/tags?post=4745"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}\n
