\u00a0serves 2<\/em><\/p>\n susan’s lemon garlic vinaigrette \u00a0 \u00a0<\/strong><\/p>\n whisk ingredients together<\/em><\/p>\n pre heat oven to 400\u00ba<\/p>\n trim scallions, and slice as thinly as possible, then squeeze slices into tiny rings.\u00a0thinly slice radishes, if using large size, slice cut pieces in half.\u00a0trim tough ends off asparagus, place on broiling pan, toss and coat with olive oil and coarse kosher salt.\u00a0roast asparagus until lightly browned and tips are crispy.\u00a0angle slice asparagus in 2-3 inch lengths.<\/p>\n reduce oven temp to 350\u00ba<\/p>\n heat a medium heavy ovenproof pan or skillet over med high heat<\/p>\n when pan is hot, add enough olive oil to just coat bottom<\/p>\n when oil is hot add sea scallops flat side down and sear until they caramelize and turn golden brown, 2-3 min.<\/p>\n flip scallops and pop the pan into oven for another 2 min. or until they are barely opaque in the center<\/p>\n remove from pan, set aside then assemble the salad<\/p>\n <\/p>\n toss arugula, tomatoes, radishes, asparagus (save tips to garnish around plate) and 1\/2 the scallions<\/p>\n slowly toss in the vinaigrette to taste, there should be extra to drizzle over scallops<\/p>\n plate the salad garnish with asparagus tips<\/p>\n arrange scallops around the salad, drizzle a little vinaigrette over them and sprinkle remaining scallions over salad<\/p>\n","protected":false},"excerpt":{"rendered":" i chose sea scallops but gulf shrimp, crabmeat or a combination of all three would be great too. <\/p>\n","protected":false},"author":4,"featured_media":6070,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[14],"tags":[206,148],"aioseo_notices":[],"_links":{"self":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts\/4763"}],"collection":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/users\/4"}],"replies":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/comments?post=4763"}],"version-history":[{"count":0,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/posts\/4763\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/media\/6070"}],"wp:attachment":[{"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/media?parent=4763"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/categories?post=4763"},{"taxonomy":"post_tag","embeddable":true,"href":"\/\/www.bulkreeftv.com\/wp-json\/wp\/v2\/tags?post=4763"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}\n
