\u2022\u00a0\u00a0 \u00a03 lbs. small squid, cleaned and cut into rings
\n\u2022 \u00a0 \u00a01\/2 cup olive oil
\n\u2022\u00a0\u00a0 \u00a01 cup chopped onion
\n\u2022\u00a0\u00a0 \u00a0freshly ground pepper
\n\u2022\u00a0\u00a0 \u00a04 oz. flat anchovies (we use ortiz brand), drained
\n\u2022\u00a0\u00a0 \u00a01 cup clam juice
\n\u2022 \u00a0 \u00a01\/4 cup finely chopped parsley
\n\u2022\u00a0\u00a0 \u00a0juice of 1 1\/2\u00a0lemons or to taste<\/p>\n

heat the oil in a saucepan and add the onion.\u00a0 cook until the onion is translucent.\u00a0 sprinkle with pepper and add the squid and anchovies.\u00a0 do not add salt until the very end, if ever (the anchovies are already salty).\u00a0 add the clam juice and parsley and simmer 30 minutes.\u00a0 add the lemon juice and serve hot in small soup bowls with parsley sprinkled over.\u00a0 serve with a crusty bread for dipping.<\/p>\n","protected":false},"excerpt":{"rendered":"
