grilled sardines
serves 4
- 12 good quality frozen, or very fresh portuguese sardines, not scaled or gutted
- coarse sea salt
- lemon wedges
- crusty bread
thaw and pat dry sardines. sprinkle with a generous amount of coarse sea salt. after 5-10 minutes brush most of the salt off.
place sardines on hot grill, no need to oil it. if you do use a grilling basket coat the inside with spray oil or olive oil. grill sardines over hot fire for 4-5 minutes a side or until just opaque in the center. if grill flares up just carefully lift sardines from the fire until flames subside.
serve with lemon. tear off a piece of bread and enjoy!
