{"id":1898,"date":"2020-07-24t08:01:15","date_gmt":"2020-07-24t08:01:15","guid":{"rendered":"\/\/www.bulkreeftv.com\/?p=1898"},"modified":"2020-07-24t18:15:34","modified_gmt":"2020-07-24t18:15:34","slug":"the-ultimate-salad-nicoise","status":"publish","type":"post","link":"\/\/www.bulkreeftv.com\/the-ultimate-salad-nicoise\/","title":{"rendered":"the ultimate salad ni\u00e7oise"},"content":{"rendered":"<p><em>a true meal in itself. the following recipe is our version of the classic style of southern france, but topped with seared, fresh, sashimi-grade tuna. serves 4.<\/em><\/p>\n<p><strong>ingredients for vinaigrette:<img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-7342\" src=\"\/\/www.bulkreeftv.com\/wp-content\/uploads\/2019\/03\/tuna-ni\u00e7oise-salad-744x1024.jpg\" alt=\"tuna ni\u00e7oise salad\" width=\"450\" height=\"619\" srcset=\"\/\/www.bulkreeftv.com\/wp-content\/uploads\/2019\/03\/tuna-ni\u00e7oise-salad-744x1024.jpg 744w, \/\/www.bulkreeftv.com\/wp-content\/uploads\/2019\/03\/tuna-ni\u00e7oise-salad-218x300.jpg 218w, \/\/www.bulkreeftv.com\/wp-content\/uploads\/2019\/03\/tuna-ni\u00e7oise-salad-768x1057.jpg 768w, \/\/www.bulkreeftv.com\/wp-content\/uploads\/2019\/03\/tuna-ni\u00e7oise-salad-600x826.jpg 600w, \/\/www.bulkreeftv.com\/wp-content\/uploads\/2019\/03\/tuna-ni\u00e7oise-salad.jpg 1000w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/strong><\/p>\n<ul>\n<li>1 minced clove of garlic<\/li>\n<li>1\/2 t dijon mustard<\/li>\n<li>1 1\/2 t red wine vinegar<\/li>\n<li>1\/4 lemon, juiced<\/li>\n<li>1 t chopped fresh flat-leaf parsley<\/li>\n<li>1 t minced fresh tarragon<\/li>\n<li>salt and freshly ground black pepper<\/li>\n<li>1\/4 cup extra-virgin olive oil<\/li>\n<\/ul>\n<p><strong>ingredients for salad:<\/strong><\/p>\n<ul>\n<li>1 lb. fresh tuna: yellowfin, bigeye or albacore<\/li>\n<li>fresh baby greens, boston lettuce or romaine to line the platter<\/li>\n<li>3\/4 lb. small new or fingerling potatoes, scrubbed and cut in half<\/li>\n<li>4 eggs, boiled, cut into quarters<\/li>\n<li>1\/2 lb. green beans, stems removed<\/li>\n<li>1 t extra-virgin olive oil<\/li>\n<li>salt and freshly ground black pepper<\/li>\n<li>1\/2 pint cherry tomatoes, halved<\/li>\n<li>1\/2 cup ni\u00e7oise olives<\/li>\n<li>8 anchovy fillets, we use ortiz brand, so good you might want to add a few more!<\/li>\n<li>1\/4 cup capers<\/li>\n<\/ul>\n<p>whisk the vinaigrette ingredients together until emulsified then set aside for the flavors to meld.<\/p>\n<p>bring potatoes to a boil in a pot of salted water, cook until fork tender. you can either steam the beans above the boiling water for about 5 minutes, or simply add them to the boiling water and cook for 3 minutes. you want the beans to remain crisp. drain everything in a colander under cold water.<\/p>\n<p>lightly coat the bottom of a heavy-bottom skillet or cast iron pan with 1 t olive oil\u00a0and place on high heat. season tuna with salt &amp; pepper. when the pan is hot, sear the tuna for 2 minutes per side, the middle should be rare. remove from pan and place on a cutting board while you compose the platter.<\/p>\n<p><strong>composing the platter<\/strong><br \/>\nline the platter with greens. use a bowl to coat the individual ingredients (potaotes, beans, capers, tomatoes, olives and anchovies) in vinaigrette before arranging the separate ingredients like a dial around the platter.
