\u2022 2 cod fillets (about 1 pound each)
\n\u2022 flour for dredging
\n\u2022 1\/4 c olive oil
\n\u2022 salt and freshly ground black pepper to taste
\n\u2022 3 cloves garlic, peeled and crushed
\n\u2022 1\/2 c dry white wine
\n\u2022 1\/4 minced fresh italian parsley
\n\u2022 3 scallions or chopped shallots (about 1\/4 cup)<\/p>\n

preheat oven to the highest temperature short of broiling (500\u00b0 or more).\u00a0 heat a 10\u201d nonstick skillet with an ovenproof handle over medium-heat for a minute or two.\u00a0 dredge the flesh side of the cod fillet in flour.\u00a0 add the olive oil to the pan and heat it until a pinch of flour sizzles when dropped into the pan.<\/p>\n

cook the cod, floured side down, until it is browned (4\u20134 minutes). turn it and season with salt and pepper, then add the garlic, wine, parley and scallions.\u00a0 immediately transfer pan to oven and bake until the cod is done about 5\u20137 minutes (cod begins to \u201cgape\u201d and it will be opaque throughout, offering no resistance to a thin bladed knife).\u00a0 avoid overcooking.<\/p>\n
