{"id":4672,"date":"2019-04-12t12:10:35","date_gmt":"2019-04-12t12:10:35","guid":{"rendered":"\/\/www.bulkreeftv.com\/?p=4672"},"modified":"2019-04-12t19:19:12","modified_gmt":"2019-04-12t19:19:12","slug":"vietnamese-style-shrimp-fritters-with-nuoc-cham-dipping-sauce","status":"publish","type":"post","link":"\/\/www.bulkreeftv.com\/vietnamese-style-shrimp-fritters-with-nuoc-cham-dipping-sauce\/","title":{"rendered":"vietnamese style shrimp fritters with nuoc cham dipping sauce"},"content":{"rendered":"<p>serves<i> 4 or appetizers for 8-10 \u00a0<a href=\"\/\/www.bulkreeftv.com\/dip-your-fritter-into-this\/\" target=\"_blank\" rel=\"noopener noreferrer\">see mike&#8217;s blog post<\/a><\/i><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6466 size-full\" src=\"\/\/www.bulkreeftv.com\/wp-content\/uploads\/2014\/04\/shrimp-fritters-preparation.jpg\" alt=\"shrimp-fritters-preparation\" width=\"500\" height=\"310\" srcset=\"\/\/www.bulkreeftv.com\/wp-content\/uploads\/2014\/04\/shrimp-fritters-preparation.jpg 500w, \/\/www.bulkreeftv.com\/wp-content\/uploads\/2014\/04\/shrimp-fritters-preparation-300x186.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/p>\n<ul>\n<li>1 lb. wild gulf shrimp, peeled and deveined, tails off<\/li>\n<li>2 eggs<\/li>\n<li>3 scallions, white section and some of green, chopped<\/li>\n<li>1 t lime juice<\/li>\n<li>2 t chopped cilantro<\/li>\n<li>1\/2 cup julienned carrots cut in 1 1\/4 inch lengths<\/li>\n<li>2 t minced fresh lemongrass (remove tough outer skin, slice in half lengthwise, pound to bring out oils &amp; flavor before mincing)<\/li>\n<li>1\/2 cup milk<\/li>\n<li>1 1\/2 cups flour<\/li>\n<li>2 t baking powder<\/li>\n<li>1\/2 t red bird&#8217;s eye chili (thai chili), minced<\/li>\n<li>pinch of salt and pepper<\/li>\n<li>peanut or vegetable oil for frying<\/li>\n<\/ul>\n<p><strong>fish sauce vinaigrette (nuoc cham)<\/strong><\/p>\n<ul>\n<li>4 large cloves garlic, finely chopped<\/li>\n<li>2 red bird&#8217;s eye chilies, finely chopped<\/li>\n<li>6 t sugar<\/li>\n<li>12 oz. water<\/li>\n<li>1\/2 cup fish sauce (nuoc mam)<\/li>\n<li>1\/4 cup fresh squeezed lime juice<\/li>\n<\/ul>\n<p>prepare the nuoc cham by dissolving the sugar in water and adding the rest of the ingredients. easy!<\/p>\n<p>pre-heat oven to around 150\u00ba (to keep fritters warm between batches)<\/p>\n<p>for the fish cakes start out by peeling and deveining the shrimp. rinse, pat dry and chop into chunks a little under 1\/4 inch.<\/p>\n<p>next beat the eggs in a mixing bowl then stir in the milk. whisk in the flour and baking powder then add the rest of the ingredients.<\/p>\n<p>over medium heat in a heavy pan or skillet add enough oil to cover fritters (about 1 inch deep). if you have a thermometer 350\u00ba is where you want to be.\u00a0when oil is hot, with a soup spoon, add the fritters to oil. don\u2019t worry if they are imperfect in shape, but keep them all close to 1-1 1\/2 inches in diameter. after about 2 minutes the fritters will start to brown. flip them and after another 2 min., start turning them till they are cooked through, i cut into one to make sure the shrimp is opaque in the center.<\/p>\n<p>serve with dipping sauce.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6451 size-full\" src=\"\/\/www.bulkreeftv.com\/wp-content\/uploads\/2014\/04\/nuoc-cham-fish-sauce-vinaigrette.jpg\" alt=\"//www.bulkreeftv.com/www/wp-json/wp/v2/posts/\" width=\"350\" height=\"305\" srcset=\"\/\/www.bulkreeftv.com\/wp-content\/uploads\/2014\/04\/nuoc-cham-fish-sauce-vinaigrette.jpg 350w, \/\/www.bulkreeftv.com\/wp-content\/uploads\/2014\/04\/nuoc-cham-fish-sauce-vinaigrette-300x261.jpg 300w\" sizes=\"(max-width: 350px) 100vw, 350px\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>the sweet decadence of shrimp in a fried, fluffy fritter dipped into a sauce that has a salty, sour, sweet, not bitter, and what was that indescribably delicious 5th taste, oh yes!
